The weather could not have been more perfect this weekend. Mr. B and I tool several walks around the lake, did some vacation planning and made recipes using ingredients directly from our family farm. We’re lucky – my dad grows the most incredibly sweet-tasting tomatoes and we’ve been eating them non-stop this summer. One of our favorite ways to enjoy tomatoes is our take of the classic BLT sandwich. If you like food, I promise you won’t be disappointed with this sandwich. From the crusty baguette, deliciously smoky bacon, flavorful tomatoes to the spicy “rooster mayo” it’s summer defined in a sandwich.
Mr. B’s BLT
Ingredients
Crusty baguette (if you live in Minneapolis, our go-to baguette of choice comes from Rustica)
Arugula
Sliced tomatoes
Crispy, delicious bacon (we’re very generous with our bacon portions)
Sliced avocado
Rooster mayo – (Rooster mayo is just sriracha mixed with mayo – I mix one tsp. of sriracha for every Tbsp. of mayo; feel free to adjust according to your tastes)
Directions (and I use the term directions here loosely – I mean, it’s not hard to make a BLT:) The only advice I have is to use the freshest ingredients for this sandwich).
Place bacon on a foil-lined sheetpan in a pre-heated 400 degree oven (usually takes between 20 – 25 minutes, depending on how crisp you like your bacon). Once finished, place bacon on paper towels to drain any excess fat.
Slice baguette and spread sriracha mayo on both sides of the bread. Layer one side of the bread with arugula and sliced avocados and place tomatoes and bacon on the other side. Enjoy!
